1. Build Your Marinade

Start with the basics: acid (vinegar or lemon juice), oil (or other fat), spices and herbs. A good rule of thumb is a 1:3 ratio of acidity to oil. The acidity works to tenderize your meat, while the oil provides moisture.

2. Break Dry Seasonings into Four Groups

Salts and sugars, pepper, transition spices, and signature flavours. To prevent sugar caramelization, less sugar should be added to food with longer cooking times.

3. Season Gently

Foods such as cabbage, beets, apples, and broccoli taste delicious when grilled. Don’t be afraid to get creative!

9. Lid Up or Down?

Grilling with the lid up is great for crisping and searing. Closing the lid creates a convection oven effect, which can help the interior of your food to cook through. 

10. Let It Rest
